I decided to make salmon on a bed of spinach and tomatoes. Wow, sounds fancy!
Just heat the spinach with some onions and garlic gloves. Season to taste and put in an ovenproof dish. Slice some small and sweet tomatoes and put on the spinach. Season again of needed. Place the salmon on top of the vegetables and drizzle with olive oil and lemon juice. I like lemon a lot, so I decided to place a slice of lemon on each piece of fish. Now it goes for 15-25 minutes (200°C) in the oven.
Some of my experiments failed horribly, but this dish is just fantastic.
The sweet tomatoes counterbalance the bitter spinach, and the lemon makes the salmon even more flavoursome.
You can vary the recipe according to your needs and tastes.
