If you cannot get a package of soup greens, just take two carrots, a piece of celeriac, some kohlrabi, a piece of leek and a sprig of parsley.
Now dice the meat and slice the vegetables to your liking. Add the Brussels sprouts, the meat and veg to the stock and re-heat. Season to taste.
1kg Bussels sprouts
500g gammon steak or smoked pork chops
1 package of soup greens
1. Peel the vegetables, and bring them and the meat in cold, slightly salted water to the boil. Simmer for 60 minutes.
2. Meanwhile, prepare the sprouts by slicing off some of the stalk, remove some of the outer leaves and cut the stalk crosswise. Boil for 15 minutes in salt water. Drain and put aside.
3. Remove veg and meat from the stock and pour through a sieve. Dice the meat and the vegetables. Add to the stock, add Brussel sprouts and re-heat. Season to taste.
