Recently I started to become interested in Japanese food after I discovered a great YouTube channel. It's called Cooking with Dog and shows how to cook easy Japanese dishes. When I went to the farmer's market today I discovered a lovely piece of salmon fillet and decided to try Salmon Yakizuke. It's a delicious fish and veg meal which you can prepare quickly.
The dish is really easy to prepare. First, wash the salmon and marinate it in a tablespoon of sake. Then make shallow incision at both sides of the long green onions (or a slim leek) and cut into 4chm pieces. Cut the red pepper into similar sized pieces. I also added a handful of sugar snaps because they're going nice with the dish. Finally, prepare the marinade by boiling sake and mirin and adding rice vinegar, soy sauce, lemon juice, kombu seeweed and red chilis (if you want it slightly hot).
Now you stir-fry the vegetables and put them in the marinade. Remove all excess liquid from the salmon, slightly salt it and coat in flour. Finally, add it to the pan and fry until golden brown and still juicy. Enjoy :)
